Grilled Potato and Pork with Beet, Green Bean and Carrot Salad

Ingredients

• Pork200 g
• Potato1 medium (180 g)
• Beets1 count (80 g)
• Carrot1/2 medium (30 g)
• Green Beans1/2 cup (50 g)
• Oil1 tablespoon (10 ml)
• Lemon Juice1 tablespoon (15 g)

   Step 1

   For this recipe you need cooked beets.

   Boil water in a pot over high heat. In the meantime, peel and cut the potatoes into pieces. You can also use small potatoes.

   Once boiling, add the potato. Let boil for 8-10 minutes until soft. Drain.

   Then, heat the grill over high heat and add salt and pepper to the pork.

   Once heated, pour half the oil and add the pork. Cook each side for 4-6 minutes over medium heat.

   Then lower the heat, cover and continue cooking for 5-10 minutes or until well cooked. Set aside.

   At the same time, heat in a pot with water and add a pinch of salt. Cut the carrot into sticks and then cut off the ends of the green beans.

   Once boiling, add the green beans with the carrot and boil for about 6 minutes. Then, remove and drain.

   Peel the beets and slice. Mix with the green beans and carrot. Season with the remaining oil, lemon juice and salt and pepper to taste.
