Lentil, Beef, Bell Pepper and Cucumber Salad with Avocado Dressing

Ingredients

• Lentils1/2 cup (100 g)
• Beef120 g
• Oil1 teaspoon (5 ml)
• Lemon Juice1 tablespoon (15 g)
• Avocado1/4 count (60 g)
• Yogurt1/4 cup (60 g)
• Cucumber1/2 cup (60 g)
• Bell Pepper1/2 count (60 g)

Instructions

   Step 1

   For this recipe you need cooked lentils.

   Heat the oil in a pan over medium heat.

   Cut the beef into bite-size pieces and salt and pepper.

   Once heated, add the beef and brown each side for about 2 minutes, or until cooked as desired.

   Cut the bell pepper into chunks and slice the cucumber.

   For the dressing, mix the mashed avocado, lemon juice and yogurt. Salt and pepper to taste. Optional: Add a little mustard.
