Mix well and shape the meatballs using your hands. Refrigerate.
Meanwhile, place a pan over high heat. Once heated, pour half of the oil and add the meatballs.
Cook over medium heat for about 8-10 minutes or until browned on the outside and cooked inside. Stir occasionally.
Remove and set aside.
Simultaneously, make the salad. Cut the lettuce leaves into pieces, peel and grate the carrot.
Mix with the green olives, season with the remaining oil, lemon juice and salt and pepper to taste.
If desired, replace some of the lettuce leaves with purple lettuce or cabbage.
Serve the meatballs on a plate with salad and olives.
