Instructions
Peel and dice the potato. Put in a pot with boiling water, let boil for 10-12 minutes and remove.
Then heat a deep pan over high heat. In the meantime, add salt and pepper to the pork and cut into bites.
Once heated, pour half the oil, spread and add the pork.
Cook for 6 minutes while stirring from time to time until all its sides are seared. Remove and set aside.
Then chop the onion and slice the mushrooms.
Pour the remaining oil in the same pan and stir-fry the mushrooms with the onion for 5 minutes over medium heat.
Then add the soy sauce, paprika and broth.
Add the seared pork and cook over low heat for 10-15 minutes or until the sauce is thicker and the pork soft.
Once the potatoes are soft, remove and drain. Smash and mix with the butter, milk and salt and pepper to taste.
Serve the pork with the mushroom sauce and mashed potatoes on a plate. You can season with a pinch of oregano.
