Boil the pasta in water with a little salt according to the time indicated on the package. Once done, turn off.
Place the cooked pasta under cold water to cool and then drain.
Place a pan over high heat. While heating, season the chicken with salt and pepper.
Once heated, pour half of the oil, spread and add the chicken. Cook for 4 minutes per side over medium heat.
Simultaneously, cut the broccoli and cauliflower into small florets and place in a pot of boiling water.
Boil for 3 minutes. Once tender, remove and drain. You can also cook them in the microwave for 5 minutes.
For the dressing: Mix the yogurt with lemon juice and the remaining oil. Season with salt and pepper.
In a bowl place the cold pasta, chicken, broccoli, cauliflower and diced tomato. Pour the dressing, mix well and serve.
