Boil the rice in a pot over high heat. Add 3 times water for the rice serving.
Once boiling, cover, lower the heat to medium-low and let cook for 15-20 minutes.
In the meantime, cut the broccoli and add to the rice 4 minutes before removing. Turn off.
Cut the chicken, chop the onion, garlic and tomato, and then cut the carrot into thin strips or grate.
Heat a pan over high heat. Once heated, pour the oil, spread and then add the onion with a pinch of salt. Stir-fry for 3-5 minutes over medium heat.
Then add the garlic, tomato, tomato sauce, salt and pepper to taste. Cook for 5 more minutes.
Add the chicken, orange juice and, if you want, the grated orange zest. Mix well and add the carrot.
Cook over medium heat until the chicken is well cooked. This will take about 20 minutes.
Serve the rice, the chicken with the orange sauce and the vegetables on a plate.
