Heat a pan over medium heat. In the meantime, add salt and pepper to the salmon.
Once heated, add the olive oil and the salmon. Cook each side for 2 minutes (depending on how thick it is). Remove and set aside.
Chop the leek and squeeze 1/3 of the orange.
On the same pan, add the leek with a pinch of salt and cook for 4-5 minutes over medium heat.
Once it starts browning, add the orange juice and vinegar.
In the meantime, mix the cornstarch with some water.
After 6-8 minutes, add the diluted cornstarch and stir quickly until the sauce gets thicker.
Add the salmon again and let cook for some minutes. Season with salt and remove from heat.
Cut the remaining orange into triangles and put on a plate. Serve the salmon on top and then the orange sauce.
