Instructions
Place a pot filled with water over high heat. While boiling, peel and dice the potato.
Once the water is boiling, add the potatoes. Let boil for 12 minutes and once there are 4-5 minutes left, add the garlic to the water.
Meanwhile, heat a pan or griddle over high heat and season the chicken breast with salt and pepper or the spices of your choice.
Once heated, pour in the oil, add the chicken, reduce the heat to medium and cook for approximately 4-5 minutes per side or until browned.
Once the potatoes are tender, remove and drain. Mash together with the garlic until creamy.
Add the milk, butter, chopped parsley and salt and pepper to taste. Mix until blended.
Serve the chicken with mashed potatoes hot on a plate.
