Make a cross cut at the top of the tomato of only a finger deep.
Put the tomato in a pot with boiling water and let boil for 5 minutes. Next, remove, drain and blend. Set aside.
Heat a pan over medium heat. In the meantime, cut the pork and add salt and pepper.
Once heated, pour the oil, add the pork and sear all its sides. This will take 3-4 minutes.
Next, chop the onion and garlic.
Once the pork is brown, add the onion and garlic. Lower the heat to medium and stir-fry for 5 minutes.
Then add the tomato sauce with the lentils previously cooked. Add salt and pepper to taste and rosemary.
Cover and cook for 10-15 minutes over low heat.
Once ready, remove and serve hot. You can garnish with some rosemary leaves.
