Boil water in a pot. In the meantime, cut the carrot into small pieces and add to the boiling water pot. Let boil for 6 minutes. Remove and set aside.
Add salt and pepper to taste and cut the pork into medium pieces. In the meantime, heat half the oil in a pot over high heat.
Once heated, add the pork and brown all its sides for about 5 minutes. Remove and set aside.
Chop the onion and garlic and cut the potato into medium pieces.
Heat the remaining oil in the pot and stir-fry the onion with the garlic and a pinch of salt for 5 minutes over medium heat.
Add pepper to taste and then water or broth.
Add the potato, peas and carrot. Cover and cook over low heat for 10-15 minutes or until well-cooked. If necessary, add more liquid to cover.
Remove and serve hot.
Optional: If you have more time, you can cook the stew over low heat for more time for better taste.
