Peel and dice the potato. Boil for 10-12 minutes or until soft.
Then heat another deep pan over high heat. In the meantime, cut the pork into bites and add salt and pepper.
Once heated, pour half the oil, spread and add the pork.
Sear both sides of the pork until browned. This will take 5-6 minutes, then remove and set aside.
At the same time, chop the garlic and slice the mushrooms.
Add the remaining oil to a pan and stir-fry the mushrooms with the garlic for 5 minutes over medium heat.
Then add the tomato sauce and broth.
Add the seared pork, cover and cook over low heat for 10-15 minutes or until the sauce thickens and the pork is tender.
Once the potatoes are soft, remove and drain. Smash and mix with the butter, milk and salt and pepper to taste.
Serve on a plate.
