Instructions
Peel and dice the potato. Boil for 10-12 minutes or until soft. Then add the spinach for 30 seconds and chop.
One or two minutes before removing, add the spinach. Once they reduce their volume, remove using a slotted spoon.
Then heat a pan over high heat and add salt and pepper to the pork.
Once heated, pour the oil and add to the pork. Brown both sides for 4-6 minutes over medium heat.
Then cover, turn the heat to low and let cook for 5-10 more minutes until well cooked and releases its juice.
Once the potatoes are soft, remove and drain. Smash until obtaining a puree and mix with butter, milk and salt and pepper to taste.
Add the spinach and mix with the puree.
Serve the pork with mashed potatoes and spinach on a plate.
