For this recipe you need cooked quinoa.
Heat water with a pinch of salt in a pot. Once boiling, add the peas.
Cook for 3 minutes and then add the broccoli previously washed and cut into pieces. Once tender, remove and drain.
At the same time, heat 1/3 of the oil in a pan over medium heat. Cut the chicken into bites and season with salt and pepper.
Once heated, add the chicken and brown all the sides. This will take 3-4 minutes.
Then lower the heat and continue cooking until well cooked. Set aside.
Mix the quinoa with the chicken, broccoli and peas.
Season with the remaining olive oil, lemon juice and salt and pepper to taste. Serve.
