Instructions
Prepare the dough by mixing 100g all-purpose flour, a pinch of salt, and 1 tablespoon oil with water until smooth. Let it rest for 20 minutes.
Boil and mash 100g potatoes and mix with 50g boiled green peas, 1 teaspoon cumin seeds, 1/2 teaspoon garam masala, 1/2 teaspoon chili powder, salt to taste, and chopped coriander.
Divide the dough into small balls and roll each into a thin oval shape. Cut each oval in half to form two semi-circles.
Form a cone from each semi-circle by folding and sealing the edges with water. Fill the cone with the potato-pea mixture and seal the open edge carefully.
Heat oil in a deep pan to 180°C (350°F). Deep fry the samosas until golden brown and crisp, about 4-5 minutes.
Remove and drain excess oil on paper towels. Serve hot with chutney or sauce.
