Instructions
Heat water with a pinch of salt. In the meantime, clean the shrimps, remove the tail and the black line at the back.
Once boiling, add the shrimps and let cook for 3-5 minutes, depending on the size.
Remove, strain and put immediately in a bowl with water and ice cubes to stop cooking process. Set aside.
Cut the avocado in half, peel and remove the pit.

Chop the onion and parsley. Cut the bell pepper into small pieces.
Mix the avocado flesh, cilantro, onion, bell pepper and shrimps in a bowl.
Season with lemon juice and salt and pepper to taste.
Stuff the avocados and serve.
If you have more stuffing, place in a bowl and serve with the avocado.
