For this recipe you need cooked quinoa.
Shell the corn and boil for 10-12 minutes. Once ready, remove and stop cooking process with cold water. Drain and set aside.
Next, chop the bell pepper and garlic, peel the shrimps, remove the black line at the back and clean.
Heat a pan over medium heat. Once heated, pour half the olive oil, spread and add the shrimps.
Add salt and pepper, the bell pepper and stir-fry for 3-5 minutes. Remove and set aside.
Cut off the ends of the green beans and, in another pot, heat water with a pinch of salt.
Once boiling, add the green beans and peas and let boil for 5 minutes. Remove, drain and set aside.
Mix the quinoa with shrimps and vegetables in a bowl.
Season with the remaining olive oil and salt and pepper to taste. Serve.
You can add any aromatic herb you like.
