Boil water in a pot. In the meantime, peel and dice the potato evenly.
Once boiling, add the potatoes and boil for 10 minutes. Remove once soft without falling apart. Drain.
Add salt and pepper to taste and cut into medium pieces.
Once heated, add the beef and brown all its sides for about 5 minutes.
In the meantime, chop the onion and cut the mushrooms.
Add the onion and stir-fry with the beef over medium heat for 4-5 minutes.
Then add the mushrooms and cook for 4 more minutes. Add salt and pepper to taste.
Add the remaining oil and the previously cooked potatoes.
Let cook for 5 more minutes until browned.
Remove and sprinkle with chopped parsley and serve.
If you want, you can add some chili pepper.
