Instructions
For this recipe you will use the white and green part of the scallion. Divide into two.
While you boil water in a pot, peel and dice the potatoes evenly.
Once boiling, add the potatoes and boil for 10 minutes. Remove once soft without falling apart. Drain.
Add salt and pepper to taste to the beef and cut into medium pieces. In the meantime, heat half the oil in a pot over high heat.
Once heated, add the bef and brown all its sides for about 5 minutes over medium heat.
In the meantime, chop the scallion.
Add the white part of the scallion and stir-fry with the beef for 4-5 minutes over medium heat.
Finally, add the remaining oil and the cooked potatoes.
Let cook for 5 more minutes until browned.
Remove, sprinkle with the green part of the scallion and serve.
You can add some chopped parsley if you want.
