Place a pot filled with water and add a little salt over high heat until boiling. Meanwhile, wash, peel and dice the potato.
Boil the potato for 10-12 minutes or until tender. When 1 minute is left, add the spinach.
Meanwhile, heat the oil in a pan over high heat. Cut the chicken into bite-sized pieces and season with salt and pepper.
Once heated, add the chicken and brown on both sides over medium heat. This will take 3-4 minutes.
Meanwhile, chop the garlic and cut tomato into pieces.
Once the chicken breast is browned, add the garlic and tomato.
Stir-fry for 6-7 minutes and remove from heat. Season to taste with salt and pepper.
Once the potatoes are soft, remove and drain with the spinach. Mash, mix with butter, milk and salt and pepper to taste.
You can shape it into balls as shown in the picture or serve as you wish.
