Instructions
For this recipe you need to have the sweet potato previously cooked and mashed.
In a bowl place the flour, baking powder and mix.
Add the egg, milk and mashed sweet potato. Mix until all the ingredients are blended, and the mixture is smooth.
Add the cinnamon and, optionally, add stevia to sweeten (or sweetener of your choice).
Let the dough rest for 5 minutes until thickened.
Place a pan over medium heat. If you do not have this type of pan, spread a little oil with a paper towel.
Once heated, add 1/3 of the mixture and try not to spread it too much. Wait a few minutes to brown and then flip.
Leave a few more minutes and remove from heat. Place on a plate and repeat until the mixture is finished.
Serve the sweet potato pancakes and pour the honey on top.
