Wash the potato and preheat the oven to 356 °F (180 °C).
Cut the potato in half. Spray with the olive oil and salt and pepper to taste.
Bake for 20 minutes. If using an air fryer, air fry for 15 minutes.
In the meantime, slice the avocado and mix the yogurt, mustard, lemon juice and salt and pepper to taste in a bowl. Set aside.
