Instructions
For this recipe you need cooked rice.
Heat half of the oil in a pot over high heat. Cut the turkey into bite-size pieces and season with salt and pepper.
Once heated, add the turkey breast and brown on both sides. This will take 3-4 minutes.
Meanwhile, chop the onion and bell pepper. Peel and grate the carrot.
When the turkey is browned, lower the heat to medium and add the rest of the oil.
Add the vegetables and stir-fry together with the turkey breast for 5-7 minutes. If you wish, you can add chopped mushrooms.
Add salt and pepper to taste and stir occasionally. Add a little liquid if required so that it does not dry out.
Simultaneously, cut the broccoli into small florets, wash and place in a pot of boiling water.
Boil for 3 minutes with a pinch of salt. Remove, drain and set aside.
When the vegetables are soft, add the rice and broccoli.
Add the mozzarella cheese pieces and cover.
Lower the heat and continue cooking until the cheese melts.
Remove and serve hot.
