For this recipe you need cooked rice.
Season the beef with salt and pepper to taste and cut into small pieces. Meanwhile, heat half of the oil in a pot over high heat.
Once heated, add the beef and brown on all sides for 5 minutes over medium heat. Set aside.
Simultaneously, chop the onion, garlic, cilantro, celery and tomato.
In the same pot, add the rest of the oil and stir-fry the celery with the onion for 5 minutes over medium heat.
Add the tomato, garlic, broth and previously seared beef. Optional: Add a bay leaf.
Once boiling, reduce the heat, cover and cook for 15 minutes until the beef is tender.
If you have more time, you can let it cook for 30 minutes so that the beef is even more tender.
Next, add the cooked rice, chopped coriander and paprika. Add salt and pepper to taste and cook for 2-3 minutes until flavorful and heated through.
Remove from heat and let stand for a few minutes before serving. If desired, you can add fresh chopped parsley.
