Instructions
Shell the corn and place in a pot with boiling water. Boil for 12 minutes, remove and drain.
Heat the oil in a pan over high heat. While heating, cut the beef into strips and season with salt and pepper.
Once heated, add to the pan and brown for 4-5 minutes.
Then lower to medium heat and continue cooking until done.
Meanwhile, cut the lettuce, bell pepper and onion into strips.
Warm the tortillas in a pan for 30 seconds per side.
Mix the beef with the corn, onion, lettuce and bell pepper. Fill the tacos with the mixture.
For the guacamole, peel the avocado, cut and mash with a fork.
Season with lemon juice and salt and pepper to taste. Optional: Add onion, tomato and/or cilantro.
Serve the beef tacos with corn and guacamole.
