For this recipe you need to have the sweet potato previously cooked. In case you don't, place the sweet potato in a pot of boiling water and boil for 8-10 minutes.
Place a pan over medium heat. While heating, dice the sweet potato.
Once heated, pour 2/3 of the oil, add the sweet potato and cook for 2 minutes per side over medium/low heat.
Separately, heat the rest of the oil in a pan, crack the eggs and fry.
Dice the avocado.
