Instructions
Place 1/3 of oil in a pan over high heat. Cut the chicken into bites and add salt and pepper to taste.
Once heated, add the chicken and brown on all sides. Cook for 3-4 minutes and stir occasionally.
Meanwhile, cut the onion into strips and slice the mushrooms.
Add the onion to the pan with another 1/3 of oil and stir-fry with the chicken for 5 minutes over medium heat. Then, add the mushrooms.
Lower the heat and continue cooking until well done , this will take for about 4-5 more minutes. Remove from heat.
At the same time, cut the broccoli into small florets and add to the pot with boiling water.
Boil for 3-4 minutes until soft. Remove, drain and set aside.
Cut the tomato and place in a bowl together with the chicken, mushrooms and broccoli.
Season with the remaining oil, lemon juice, salt and pepper to taste. Serve.
