Slice 150g pork shoulder into long strips about 2cm thick.
Prepare the marinade by mixing 1 tbsp hoisin sauce, 1 tbsp honey, 1 tbsp soy sauce, 1 tsp Chinese five-spice powder, 1 tsp red fermented tofu paste, 1 minced garlic clove, and 1 tsp grated ginger.
Marinate the pork strips in the mixture for at least 2 hours, preferably overnight in the refrigerator.
Preheat the oven to 200°C (390°F).
Place the marinated pork on a wire rack over a baking tray lined with foil.
Roast the pork for 25 minutes, basting with leftover marinade every 10 minutes.
Increase oven temperature to 220°C (430°F) and roast for an additional 5-10 minutes to caramelize the edges.
Remove from oven and let rest for 5 minutes before slicing and serving.
