Peel the pumpkin and dice evenly.
Boil the pumpkin into salted water for 10-12 minutes until soft without falling apart. Remove and drain.
In the meantime, chop the onion and garlic and cut the bell pepper into medium or small pieces. You can use any bell pepper you have available.
Heat half the oil in a pot while you cut the chicken breast into bites.
Once heated, add the chicken and cook over medium heat while stirring until browned. This will take 4-5 minutes.
Then add the remaining oil, the vegetables and a pinch of salt. Stir-fry for 5-7 minutes over medium heat.
Season with paprika, cumin and salt and pepper to taste. Add more water if required to prevent from drying.
Next, add the cooked pumpkin and let cook for some minutes for a better flavor.
Remove from heat and serve hot.
