For this recipe you need cooked brussels sprouts. Boil for 15-20 minutes.
Use a rolling pin to place the chicken breast between two sheets of plastic wrap and flatten. Season with salt and pepper.
In the center place the spinach and diced tomato. Roll up and fasten with wooden toothpicks from one end to the other.
Heat a little oil in a pan over medium heat and add the rolls. Cook for 2-3 minutes per side.
Cover and let cook for 5 more minutes to cook evenly.
Separately, place another pan over medium heat. While heating, chop the onion and garlic.
Once heated, heat the rest of the oil, spread and add the garlic and onion. Stir-fry for 5 minutes or until it turns translucent.
Then add the brussels sprouts, season with salt and pepper and continue cooking over low heat for 5 more minutes.
