For this recipe you need cooked beans.
Boil the chicken in salted water for approximately 10-15 minutes until cooked. Drain.
When slightly cooled, shred using two forks. Set aside.
Chop the garlic, onion and slice the mushrooms. Separately, heat the oil in a pot over medium heat.
Once heated, add the onion with a pinch of salt and stir-fry for about 5-7 minutes until the onion turns a translucent color.
Next, add the garlic along with the mushrooms and chicken. Add the tomato sauce and chopped cilantro.
You can replace the cilantro with oregano, thyme, rosemary or another herb.
Add the cooked beans and broth. Cover and boil for 5 minutes.
Once done, remove from heat and serve hot.
