For this recipe you need cooked rice and beans.
In a pot or a deep pan, heat half the oil over medium-high heat. In the meantime, chop the onion and garlic.
Once heated, add the onion with the garlic and a pinch of salt. Stir-fry for 3-5 minutes. You can add oregano or a bay leaf.
Then add the diced tomato. You can add some broth or water.
Season to taste and continue cooking for 5-7 minutes until the tomato realise its juice. Then, add the beans, mix well and set aside.
At the same time, heat the remaining oil in a pan over medium-high heat. Add salt and pepper to the chicken breast.
Once heated, add the chicken and cook each side for 4-6 minutes.
Remove once cooked as desired and slice.
Serve the bean stew with the chicken and rice.
