For this recipe you need cooked beans.
In a pot or a deep pan heat 2/3 of the oil over medium-high heat. In the meantime, chop the onion and garlic.
Once heated, add the onion with the garlic and a pinch of salt. Stir-fry for 3-5 minutes. You can add oregano or a bay leaf.
Then, add the chopped tomato. Peel and dice the potato and add to the pot.
Cover with water or broth and let boil for 8-10 minutes until the potato is soft.
At the same time, add salt and pepper to taste to the pork and cut into bites. In the meantime, heat the remaining oil in a pan over high heat.
Once heated, add the pork and brown both sides for 4 minutes over medium heat.
Cover, lower the heat to medium-low heat and cook for 5-10 minutes until well cooked.
Add the beans with the pork, season to taste and, if you want, add oregano, bay leaves or any herb you like.
Serve the bean stew with the potato, tomato and pork.
