Peel and dice the pumpkin. Boil for 10-12 minutes.
At the same time, heat 1/3 of the oil in a pan over medium-high heat. Add salt and pepper to the chicken.
Once heated, add the chicken to the pan and cook for 4-6 minutes per side. Remove from heat when well done.
Separately, place a pot with water over high heat.
Peel and dice the carrot, cut the broccoli into small florets.
Once boiling, add the carrot and boil for 3 minutes. Then add the broccoli and boil for 3-4 more minutes.
Once the vegetables well done, remove and drain. Season with half of the olive oil, lemon juice, salt and pepper.
To finish the mashed pumpkin, place the boiled pumpkin in a bowl and mash to the desired consistency.
Season with the remaining olive oil, salt and pepper to taste. If you wish, you can add a pinch of nutmeg, cinnamon and/or stevia.
Serve.
