For the crepes: In a bowl beat the egg, milk and salt.
Add the sifted flour and beat again to obtain a mixture without lumps.
Heat a non-stick pan over medium heat. Once heated, pour the mixture evenly to obtain the desired size.
Once the bottom of the crepe is set, flip it over and let it cook thoroughly. Repeat the process two more times.
For the filling: Heat a pan over high heat. Meanwhile, mince the garlic. Once heated, add half of the oil, spread and stir-fry the garlic for 1 more minute over medium heat.
Add the ground beef, slightly increase the heat, season with salt, pepper and oregano. Optional: Add cumin.
Stir and cook for 10-12 minutes or until the beef turns brown.
Remove from heat and set aside.
For the sauce: In the same pan where you cooked the beef, add the remaining oil and stir-fry the chopped onion with a pinch of salt for 5 minutes over medium heat.
Next, add the tomato sauce and water (half the indicated amount of sauce).
Add chopped parsley/oregano, salt and pepper to taste. Stir and cook for 5 minutes. Remove.
Assemble the crepes by placing some of the filling and rolling the dough.
Place the crepes on a plate and pour the tomato sauce over them.
