In a bowl beat the egg whites and salt and pepper to taste.
Chop the spinach and add to the bowl.
Place a non-stick pan over medium heat. If you don't have one, add a little oil.
Once heated, add the egg mixture and cook for 3 minutes.
Add the tortilla on top of the egg mixture and then flip over using a spatula.
Add the cheese and tomato slices.
Cover for 2 minutes to let the cheese melt.
Roll up and serve.
