Instructions
Chop the scallions, garlic and cut the tofu into pieces.
Place a pan or wok over high heat. Once heated, add half of the oil, spread and add the scallion and garlic.
Stir-fry for 1 minute. If you wish, you can add ginger powder.
Add the tofu and mix well.
Separately, heat the rest of the oil in a pan and add the beaten egg with some salt to taste.
Cook for 1-2 minutes and once the bottom is set, flip and let cook for a few more seconds. Dice the omelet and set aside.
Add the cooked rice to the sautéed onion and tofu. Brown for a couple of minutes.
Then add the soy sauce, oyster sauce and salt to taste. Mix.
Add the omelet. Mix and then garnish with scallions. Serve.
