For the dough, put the flour, half tablespoon of cornstarch and a pinch of salt in a bowl. Add water little by little (about 15 ml).
Integrate the ingredients. Then knead on the kitchen table for 10 minutes. Once soft, cover in foil and let sit for 2 hours.
Next, knead again to soften more. Cut into 4 parts. Roll the dough on the floured kitchen table giving it a round shape.
It has to be highly thin (the edges in particular). Once ready, cover with a wet cloth and set aside.
For the filling, chop the scallion, cabbage and garlic.
In a bowl, put ground beef, garlic, ginger, one tablespoon of soy sauce, a pinch of salt, sugar and half tablespoon of cornstarch. Mix.
Add the chopped scallion and cabbage, mix again and cover with a foil again. Let sit in the fridge for 20 minutes.
To fill the jiaozi: put a tablespoon of filling in each piece of dough.
Wet the edges of the dough, fold in half and close. Close it as you see on the picture and press.
For the cooking: preheat some oil in a pan over medium heat. Put the jiaozi and fry for 3-4 minutes, until the bottom part is brown.
Then add water until covering the bottom part. Cover and let cook until the water evaporates, for about 8-10 minutes.
In the meantime, prepare the sauce by mixing 2 tablespoons of soy sauce, half tablespoon of sesame oil and half tablespoon of rice vinegar in a bowl.
Serve the gyoza on a plate with the sauce.
