Place a pot with water over high heat. In the meantime, peel and dice the potato.

Cover and cook for 2-3 more minutes until the cheese is gratinated. Set aside.
Separately, pour the remaining oil in the pan over high heat. Once heates, add the potatoes.
Stir-fry for 3-4 minutes and brown on all sides. Add salt and pepper to taste and, if you wish, you can add garlic powder.
Serve the omelet with chopped potatoes on a plate.
