Cut the beef in pieces and add salt and pepper to taste.
Heat half of the oil in a pot over high heat and add the beef. Lower the heat to medium and sear all the sides of the beef evenly for 4 to 5 minutes.
Separate the beef from its cooking juice and let it stand.
Cut the onion into thin sticks, slice the carrot and chop the garlic. Wash, peel and cut the potato into medium pieces.
In the same pot, add the remaining oil over medium heat and stir-fry the onion with the garlic and a pinch of salt for 5 minutes.
Pour the tomato sauce, the carrot, the white wine vinegar and the oregano. Mix and bring to boil.
Add the beef, its cooking juice and water until covering everything.
Cover the pot, lower the heat and cook for 30 minutes or until tender.
About 10-12 minutes before removing the beef, add the potato and more water if required.
Once the potato is tender, remove the beef, let it sit for some minutes and cut it into medium pieces.
Once heated, add the peas and remaining garlic. Add salt and pepper to taste and stir-fry for about 3 minutes until flavorful. Remove.
Serve the juicy beef hot.
