For this recipe you need lean meat cuts. Keep in mind that each cut has different cooking times.
Place two pots filled with water over high heat until boiling.
In the meantime, cut off the ends of the green beans, cut the carrot into strips and dice the potato.
Once the water is boiling, add the green beans and carrots to one pot and boil for 6 minutes.
In the other pot, place the potato and boil for 12 minutes. Once done, remove, drain and set aside.
Simultaneously, season the beef with salt and pepper to taste.
Place a pan over high heat and once heated, pour half of the oil. Add the meat and brown on both sides for 4-5 minutes.
Meanwhile, chop the onion. Next, remove the meat and add the remaining oil together with the onion to the pan and stir-fry over medium heat for 5 minutes.
Add the meat, cover, lower the heat and let it cook for 10-15 minutes. If you wish, you can add a little broth or water.
Once the potato is done, mix it with the milk and butter. Mash until creamy. Season with salt and pepper.
Season the green beans and carrots with the lemon juice, salt and pepper to taste.
On a plate, serve the roast beef in its sauce with mashed potatoes and vegetables.
