Wash the lentils and drain. Separately, chop the onion, bell pepper and garlic. Next, dice the potato and carrot.
Heat a pot over high heat. Once heated, add the oil and stir-fry the onion for 5 minutes over low heat. Add the garlic, mix and cook for 2 more minutes.
Add the carrot, bell pepper and mix. Cook for 2 more minutes.
Add the sliced chorizo and stir. Add the paprika, tomato sauce and mix.
Add the lentils together with the water and bring to boil. Lower the heat and cook for 20 minutes.
Add the diced potatoes and cook for 10 more minutes. Serve hot.
