For this recipe you need cooked chickpeas.
Place the chickpeas, almond milk, garlic, lemon juice, olive oil, salt and pepper to taste in a blender or food processor.
Blend until you have a smooth paste. Add more chickpea cooking broth (or water) if required until desired consistency.
Transfer to a pot over medium heat to heat it.
Simultaneously, place a pan over medium high heat. While heating, chop the onion and slice the mushrooms.
Once heated, add the oil and stir-fry the onion with the mushrooms and a pinch of salt for 5-7 minutes over medium heat.
Once done, remove from the heat and season with salt and pepper.
In a plate serve the mashed chickpeas with the onion and mushroom stir-fry. Optional: Sprinkle parsley on the mushrooms.
