For this recipe you need to have oat flour or quick oats. If you don't have oat flour, add rolled oats to a blender until you have a powdery flour.
Crack the eggs in a bowl and beat with a fork or hand blender.
Add the oats with the cinnamon and stevia. Beat until integrating well and let stand for 5 minutes
Meanwhile, peel the apple and place in a bowl. If you wish, you can add stevia and/or cinnamon.
Cook in the microwave for 2-3 minutes or you can also cook in a small pot over low heat for 5 minutes.
Next, heat a non-stick pan over medium heat. Once heated, pour the mixture divided into 3-4 parts.
Cook for 1-2 minutes per side over medium-low heat.
Serve the pancakes with the apple. Pour the yogurt.
