If you don't have oat flour available, simply add rolled oats to a blender and blitz for about 15 seconds until you have a powdery flour.
Place the eggs in a pot of boiling water and boil for 8-9 minutes.
Separately, mix the oats with the water and a pinch of salt. Let stand for 5 minutes.
Simultaneously, in a bowl add the mustard together with the yogurt, lemon juice and salt and pepper. Mix well and set aside.
Place a non-stick pan over medium heat until heated.
Once heated, pour the mixture and let it cook for 2 to 3 minutes per side. If you do not have this type of pan, use just enough oil.

Serve the egg on the tortilla and roll up.
