Instructions
Place a pot over medium heat. While heating, cut the chicken into bite-sized pieces, season with salt, pepper and oregano.
Once heated, pour in half of the oil and add the chicken. Stir and cook 4-5 minutes. Remove and set aside.
Chop the onion and garlic. Peel the carrot and dice it together with the bell pepper and zucchini.
Add the rest of the oil and stir-fry the onion with the garlic and a pinch of salt for 5 minutes.
Then add the bell pepper, zucchini and carrot. Add salt and pepper to taste and season with paprika.
Add the chicken again. If you wish, you can add a little broth or water and wait until it reaches boiling point.
Lower the heat, cover and continue cooking for 6-8 minutes.
Once the vegetables are tender, remove from heat and serve hot.
