Instructions
Boil the pasta in water with a little salt according to the time indicated on the package. Once done, remove and drain.
Cut the broccoli into small florets, wash and place in a pot filled with boiling water. Boil for 3 minutes. Remove, drain and set aside.
For the sauce: In a blender place cashews, lemon juice, olive oil, garlic and vegetable milk. Add salt and pepper to taste.
Blend well until smooth. You can add more plant-based milk depending on the desired consistency.
Once done, transfer the sauce to a preheated pan and add the broccoli.
Mix well and heat for 1-2 minutes.
On a plate serve the pasta hot and pour the cashew sauce with broccoli. Mix and serve.
