Instructions
Add salt and pepper to taste and cut the pork into medium pieces. In the meantime, heat half the oil in a pot over high heat.
Once heated, add the pork and brown all its sides for about 5 minutes. Remove and set aside.
At the same time, cut the pepper and onion into strips.
Add the remaining oil in the pot and then the onion with the pepper and a pinch of salt. Stir-fry for 5-7 minutes.
Add the pork again, water or broth, tomato sauce, oregano, bay leaf and salt and pepper to taste.
Let boil and then cook over low heat for 10-15 minutes.
Once done, remove and serve hot.
Optional: If you have more time, you can cook the stew over low heat for more time for better taste.
