Instructions
Boil water in a pot. In the meantime, make a cross cut at the top of the tomato of only a finger deep.
Dice the carrot and place in the boiling water with the tomato. Let boil for 5 minutes.
Next, remove, drain and blend the tomato.
Add salt and pepper to taste and cut the pork into medium pieces. In the meantime, heat half the oil in a pot over high heat.
Once heated, add the pork and brown all its sides for about 5 minutes. Remove and set aside.
Add the remaining oil to the pot and, in the meantime, chop the onion with the garlic. Add both and stir-fry for 5 minutes.
Next, add the chopped yellow chili pepper, the cumin and add salt and pepper to taste. Add the blended tomato.
Add the pork, the peas and carrot. Cover and cook over low heat for 10-15 minutes or until the pork is cooked.
Remove and serve the stew.
Optional: If you have more time, you can cook the stew over low heat for more time for better taste.
