Pork with Mashed Potatoes and Grilled Zucchini and Tomato Salad

Ingredients

• Pork200 g
• Potato1 medium (180 g)
• Butter1/2 tablespoon (15 g)
• Milk2 tablespoon (30 ml)
• Zucchini1/2 count (100 g)
• Tomato1/2 count (65 g)
• Olive Oil2 teaspoon (10 ml)

Instructions

   Step 1

   Peel and dice the potato. Boil for 10-12 minutes or until soft.

   At the same time, heat the grill over high heat and season the pork with salt and pepper.

   Once heated, pour the oil and add the pork. Brown both sides for 4-6 minutes over medium heat.

   Then lower the heat, cover and continue cooking for 5-10 minutes or until well cooked. Set aside.

   In the meantime, slice the zucchini and tomato. Heat the remaining oil in another pan and add the zucchini and tomato.

   Cook for 2-3 minutes per side over medium heat. Remove and season with salt and pepper.

   Remove the pork and set aside. You can add any herb you may like, such as rosemary, thyme, oregano, etc.

   For the mashed potatoes, place the cooked potato in a bowl and mash until the potatoes reach your desired consistency.

   Mix with the butter and milk until creamy. Season with salt and pepper.
