For this recipe, you need cooked beets.
Peel and dice the carrot. Boil in a pot with a pinch of salt for 6 minutes. Drain.
Then heat the grill over high heat and season the pork with salt and pepper.
Once heated, pour half the oil and add the pork. Brown both sides for 4-6 minutes over medium heat.
Then lower the heat, cover and continue cooking for 5-10 minutes or until well cooked. Set aside.
